Stuffed Squids “Rivica”
Restaurant “Rivica” in Njivice, winner of diploma “Maison de gualite Saint Fortunat”, introduced island Krk among European élite. For the fact some credit have even Kvarner squids from which Ivica Lesica masterly prepared a new dish.

Ingredients
| 4 | |
| 1 kg | midsized squids |
| 100 g | prosciutto |
| 250 g | radicchio |
| 2-3 | garlic, cloves |
| parsley | |
| freshly ground pepper | |
| 100 ml | mixture of olive and sunflower oil |
| 1 teaspoon | Vegeta |
Preparation
- Clean squids and prepare a stuffing: finely chop tentacles and prosciutto, add radicchio sliced in thin strips, finely chopped parsley and garlic. All season with freshly ground pepper and Vegeta; stir.
- Fill squids with prepared stuffing and open ends fasten with toothpicks.
- Squids arrange into a saucepan on cold oil, cover and gently sauté both sides under the lid about 15 to 20 minutes.
Serving
With sautéd squids, serve fried slices of potatoes and any kind of lettuce salad.
Advice
Instead radicchio you may put leaves of young spinach into the stuffing.
Little secret
For stuffing squids easier cut the opening a little to widen it.
