Baked Zucchini
Turkish cuisine unites elements of both the Mediterranean and the exotic East. Baked zucchini can be refrigerated for 5-6 days. Served with hamburgers or grilled steak it is the perfect match.

Ingredients
| 4 | |
| 600 g | zucchini |
| 80 g | onion |
| 200 g | fresh red peppers |
| 2 cloves | garlic |
| 1 tablespoon | pine nuts |
| 2-3 tablespoons | olive oil |
| 1 tablespoon | chopped dill |
| 1 tablespoon | Vegeta |
| Dressing: | |
| 2 tablespoons | apple vinegar |
| 2 tablespoons | water |
| sugar | |
| pepper | |
Preparation
- Brown sliced onion and stripped pepper on olive oil.
- Add pine nuts, sliced zucchini and Vegeta. Stir and stew covered over low heat for about 10 minutes.
- Very briefly boil vinegar, sugar and water, pour over zucchini and stir.
- Place zucchini in a baking dish and bake in a preheated oven at 180°C for about 15 minutes.
Serving
Sprinkle baked zucchini with chopped dill and serve as side dish with hamburgers or grilled steak.
Advice
Baked zucchini can be refrigerated for a couple of days.
